ISO on photography:

ISO affects noise, seen as graininess or speckles. Low ISO (100 or 200) gives a clean, smooth image for ample light or tripod use. High ISO (800 or above) yields a noisy, rough image for low-light or handheld shooting.

The exposure triangle – aperture, shutter speed, and ISO – isn’t fixed but adaptable. Different combinations achieve the same exposure with varied effects on depth of field, motion blur, and noise. For instance, for a portrait with blurred background, use a large aperture, fast shutter speed, and low ISO.
